Step-by-Step Instructions for Bang Bang Tofu
  1. Press the Extra-firm Tofu to remove excess moisture by wrapping it in a kitchen towel and placing a weight on it for about 5 minutes.
  2. Cut the pressed tofu into approximately 1-inch cubes.
  3. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. In a mixing bowl, combine the cornstarch, panko breadcrumbs, and garlic powder.
  5. Toss the cubed tofu in the breadcrumb mixture until evenly coated.
  6. Spread the coated tofu cubes on the lined baking sheet and bake for about 40 minutes, flipping halfway through.
  7. In a separate bowl, mix vegan mayonnaise, sriracha, sugar, and salt to prepare the bang bang sauce.
  8. Once baked, toss the tofu in the bang bang sauce until evenly coated.
  9. Serve immediately and garnish with red pepper flakes and chopped chives or scallions if desired.
