  • 4 slices sturdy bread (sourdough or whole grain)
  • 1 cup fresh blueberries
  • 4 ounces white cheddar cheese medium to sharp
  • 4 ounces mozzarella cheese whole milk for gooeyness
  • 2 tablespoons butter for frying
For the Blueberry Compote
  • 1/4 cup white sugar or substitute with honey or maple syrup
  • 1 tablespoon lemon juice fresh is best
  • 1 teaspoon lemon thyme or substitute with regular thyme

Instructions
  1. In a medium saucepan, combine fresh blueberries, white sugar, lemon juice, and lemon thyme. Cook over medium heat until boiling, then simmer for 10-20 minutes until thickened.
  2. Spread a layer of blueberry compote on one side of each slice of bread. Layer cheddar and mozzarella over the compote, and top with another slice of bread.
  3. Heat a skillet over medium-low and melt butter. Ensure it bubbles without browning.
  4. Cook the sandwiches for about 2-3 minutes on each side until golden brown and the cheese is melted.
  5. Let the sandwiches sit for a minute before slicing in half to allow the compote to ooze slightly. Optionally, sprinkle with flaky sea salt and fresh thyme before serving.
