  • 1 large Egg Opt for a flax egg for a vegan version.
  • 1/2 cup All-Purpose Flour Gluten-free flour is a good option.
  • 1/4 cup Vegetable Oil Olive oil is a healthy alternative.
For the Garlic-Lime Mojo
  • 1/4 cup Olive Oil Extra virgin is preferred.
  • 2 tbl Lime Juice Juice fresh limes for vibrant taste.
  • 1 tbl White Vinegar Consider using apple cider vinegar for variation.
  • 1/2 tsp Ground Cumin Omit for a milder flavor.
  • 1/4 tsp Salt Adjust to taste.

Method
 

Step-by-Step Instructions
  1. Boil the yuca in salted water until fork-tender, about 20 minutes. Drain and let cool slightly.
  2. Mash the cooked yuca in a bowl until smooth yet slightly textured.
  3. Mix in minced garlic, chopped red onion, cilantro, salt, black pepper, smoked paprika, egg, and flour until homogenous.
  4. Divide the mixture into 6 portions and shape into thick round cakes.
  5. Fry the cakes in hot vegetable oil for 3-4 minutes on each side until golden brown.
  6. Prepare the garlic-lime mojo by sautéing minced garlic in olive oil, then stir in lime juice, vinegar, cumin, and salt.
  7. Serve the yucca cakes warm with the garlic-lime mojo.
