Ingredients

For the Gnocchi
  • 1 pound Gnocchi Choose quality store-bought or homemade for best flavor.
For Frying
  • 2 tablespoons Olive Oil Extra virgin olive oil for frying.
For the Filling
  • 4 cups Fresh Spinach Can be swapped with kale or Swiss chard.
  • 1 cup Feta Cheese Or substitute with goat cheese or a dairy-free alternative.
For Flavoring
  • 2 cloves Garlic Fresh garlic, minced.
  • 1 teaspoon Salt Adjust according to taste.
  • 1/2 teaspoon Black Pepper Freshly cracked, to taste.
  • 1/4 teaspoon Red Pepper Flakes Optional, for added heat.

Equipment

  • Large Pot
  • Colander
  • Large frying pan

Method

Step-by-Step Instructions
  1. Start by bringing a large pot of salted water to a rolling boil. Carefully add the gnocchi and cook for about 2-3 minutes until they float. Remove and drain in a colander.
  2. In a large frying pan, pour in olive oil and heat over medium-high heat. Add the drained gnocchi in a single layer and cook undisturbed for 2-3 minutes until golden brown and crispy.
  3. Turn the gnocchi to crisp up all sides for an additional 2-3 minutes until beautifully browned.
  4. Reduce the heat to medium and add minced garlic. Sauté for about 1 minute until fragrant but not browned.
  5. Add fresh spinach and stir frequently until wilted, about 2-3 minutes.
  6. Season with salt, cracked black pepper, and optional red pepper flakes. Remove from heat.
  7. Sprinkle crumbled feta cheese over the dish and gently stir to combine while warm.
