Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate the zucchinis, sprinkle with salt, and let sit for 10 minutes to draw out moisture. Squeeze out excess liquid.
  3. Add breadcrumbs, feta cheese, grated Parmesan, egg, minced garlic, oregano, black pepper, and optional red pepper flakes to zucchini. Mix thoroughly.
  4. Shape the mixture into small tots (1-2 inches) and place on the prepared baking sheet.
  5. Spray or drizzle the tots with olive oil and bake for 20-25 minutes, flipping halfway through.
  6. Allow to cool for a few minutes before serving warm with tzatziki or your favorite dip.
