Step-by-Step Instructions
  1. Season the chicken thighs generously with salt and pepper, then coat in cornstarch.
  2. Heat oil in a large skillet over medium-high heat and fry the chicken skin-side down for 7 minutes.
  3. Flip the chicken over and fry the other side for another 7 minutes until cooked through.
  4. In the same skillet, add butter and sauté minced garlic until fragrant, then add soy sauce, mirin, honey, and lemon juice.
  5. Stir in lemon zest, paprika, chili flakes, and black pepper; simmer until thick and glossy.
  6. Return chicken to the pan, coating it in the sauce and cook for another 2-3 minutes.
  7. Slice the chicken if desired and plate hot, drizzling remaining sauce on top.
