  • 4 large Russet Potatoes chopped into 1-inch chunks
  • 1 cup Water
Protein
  • 1 pound Ground Beef can substitute with turkey or chicken
  • 1 cup Frozen Corn can substitute with fresh corn
Seasoning
  • 2 tablespoons Chili Powder adjust to taste
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Pepper
Toppings
  • 1 cup Shredded Cheddar can substitute with Monterey Jack or Mexican cheese blend
  • 1 cup Guacamole can substitute with avocado
  • 1 cup Pico de Gallo or preferred salsa variety
  • 1/2 cup Sour Cream or Chipotle Crema can substitute with Greek yogurt

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Wash, peel, and chop russet potatoes into 1-inch chunks. Soak in cold water for 20-30 minutes, then drain and dry thoroughly.
  2. Toss dried potatoes with oil, half of the chili powder, and a pinch of salt. Spread on a baking sheet and roast for 20-25 minutes, turning halfway through until golden brown and crispy.
Cooking
  1. In a skillet over medium-high heat, add remaining chili powder, garlic powder, salt, and pepper; toast for 30 seconds until fragrant.
  2. Add ground beef, breaking it apart, and cook for 5-7 minutes until browned.
  3. Stir in frozen corn and pour in water; simmer for about 5 minutes until heated through.
Assembly
  1. Layer roasted potatoes in bowls, spoon the beef and corn mixture over, and top with shredded cheddar, guacamole, pico de gallo, and sour cream.
