- Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.
- In a mixing bowl, combine the mashed potatoes, cheddar cheese, beaten eggs, flour, salt, black pepper, and garlic powder. Mix until just combined.
- Scoop a portion of the mixture and roll it into a ball about the size of a ping pong ball. Continue until all mixture is shaped into balls.
- Roll each ball in breadcrumbs until fully coated.
