  • 1 tsp Black Pepper

  • 1 cup Breadcrumbs Panko for extra crispness, or crushed crackers for gluten-free
  • 1 cup All-Purpose Flour Use gluten-free flour for an alternative
  • 1 tsp Baking Powder
  • 1/2 cup Parmesan Cheese Swap for nutritional yeast for vegan version
  • 1 tsp Cajun Seasoning Optional for spiciness

Method
 

Preparation
  1. Grate the zucchini, sprinkle salt over it, and let it drain in a fine mesh strainer for 30 minutes.
  2. In a mixing bowl, combine grated broccoli, drained zucchini, grated carrots, and corn.
  3. In a separate bowl, whisk together flour, baking powder, salt, black pepper, breadcrumbs, and Parmesan.
  4. Beat the eggs until frothy and mix with the vegetable blend.
Cooking
  1. Heat oil in a skillet. Scoop veggie mixture, flatten into patties, and cook until golden brown, about 5-6 minutes each side.
  2. Transfer cooked cakes to a cooling rack.
