  • 1/2 cup Flour
  • 2 large Eggs
  • 4 tablespoons Olive oil

For the Alfredo Sauce
  • 1 cup Heavy cream Substitution: Use half-and-half or milk for a lighter option.
  • 1 cup Shredded mozzarella cheese
  • 2 cloves Garlic
  • 4 tablespoons Butter
  • 2 tablespoons Fresh parsley For garnish.
For the Pasta
  • 8 ounces Fettuccine pasta

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C) and prepare your workspace.
  2. Season both sides of the chicken breasts with salt and pepper. Set up a breading station with flour, beaten eggs, and the Parmesan-breadcrumb mixture.
  3. Dredge each chicken breast in flour, dip in eggs, then coat with cheese and breadcrumb mixture.
  4. Heat olive oil in an ovenproof skillet over medium heat. Brown each chicken side for 3-4 minutes.
  5. Transfer skillet to the oven and bake for 15-20 minutes, or until chicken reaches 165°F (75°C).
  6. In a saucepan, melt butter, add minced garlic, and sauté for 1 minute.
  7. Pour in the heavy cream and simmer. Gradually mix in mozzarella and Parmesan until smooth.
  8. Adjust the seasoning of the sauce with salt and pepper.
  9. Cook fettuccine until al dente, then toss with some Alfredo sauce. Serve chicken over pasta with remaining sauce and parsley garnish.
