Cooking Steps
- Preheat your oven to 375°F (190°C) and prepare your workspace.
- Season both sides of the chicken breasts with salt and pepper. Set up a breading station with flour, beaten eggs, and the Parmesan-breadcrumb mixture.
- Dredge each chicken breast in flour, dip in eggs, then coat with cheese and breadcrumb mixture.
- Heat olive oil in an ovenproof skillet over medium heat. Brown each chicken side for 3-4 minutes.
- Transfer skillet to the oven and bake for 15-20 minutes, or until chicken reaches 165°F (75°C).
- In a saucepan, melt butter, add minced garlic, and sauté for 1 minute.
- Pour in the heavy cream and simmer. Gradually mix in mozzarella and Parmesan until smooth.
- Adjust the seasoning of the sauce with salt and pepper.
- Cook fettuccine until al dente, then toss with some Alfredo sauce. Serve chicken over pasta with remaining sauce and parsley garnish.
