Step-by-Step Instructions
  1. Press tofu for at least 20 minutes to eliminate moisture. Place between a clean kitchen towel with a weight on top.
  2. Whisk together soy sauce, sesame oil, maple syrup, minced garlic, and grated ginger in a bowl. Set aside.
  3. Slice pressed tofu into cubes and toss in cornstarch until evenly coated. Arrange on a baking sheet and preheat oven to 400°F (200°C).
  4. Bake tofu for 20 minutes; flip halfway through for an even crisp.
  5. In a skillet, heat oil over high heat and stir-fry chopped vegetables for 3-5 minutes until tender yet crunchy.
  6. Add baked tofu to the skillet. Drizzle sauce over and gently toss to coat.
  7. Serve stir fry hot over rice, quinoa, or noodles and enjoy!
