- Press tofu for at least 20 minutes to eliminate moisture. Place between a clean kitchen towel with a weight on top.
- Whisk together soy sauce, sesame oil, maple syrup, minced garlic, and grated ginger in a bowl. Set aside.
- Slice pressed tofu into cubes and toss in cornstarch until evenly coated. Arrange on a baking sheet and preheat oven to 400°F (200°C).
- Bake tofu for 20 minutes; flip halfway through for an even crisp.
- In a skillet, heat oil over high heat and stir-fry chopped vegetables for 3-5 minutes until tender yet crunchy.
- Add baked tofu to the skillet. Drizzle sauce over and gently toss to coat.
- Serve stir fry hot over rice, quinoa, or noodles and enjoy!
