- Start by placing whole carrots in a large pot of boiling water. Cook them until they are fork-tender, about 10-15 minutes, ensuring you don't overcook them as this will affect their texture. Once done, drain the water and let the carrots cool for a few minutes.
- Once the carrots are cool enough to touch, use the bottom of a sturdy glass or a fork to gently smash each carrot. Aim for a light press that increases the surface area without completely flattening them.
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Arrange the smashed carrots with some space in between.
- Drizzle the smashed carrots with olive oil and sprinkle garlic powder, smoked paprika, Parmesan cheese, salt, and pepper over the top. Toss them lightly to evenly distribute the seasoning.
