Step-by-Step Instructions
  1. Start by placing whole carrots in a large pot of boiling water. Cook them until they are fork-tender, about 10-15 minutes, ensuring you don't overcook them as this will affect their texture. Once done, drain the water and let the carrots cool for a few minutes.
  2. Once the carrots are cool enough to touch, use the bottom of a sturdy glass or a fork to gently smash each carrot. Aim for a light press that increases the surface area without completely flattening them.
  3. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Arrange the smashed carrots with some space in between.
  4. Drizzle the smashed carrots with olive oil and sprinkle garlic powder, smoked paprika, Parmesan cheese, salt, and pepper over the top. Toss them lightly to evenly distribute the seasoning.
  5. Place the seasoned carrots in the preheated oven and roast for 25-30 minutes, flipping halfway through to promote even browning.
