Preparation
- Peel and chop your carrots into uniform pieces, then boil in salted water until fork-tender, about 10-15 minutes.
- Drain and let the carrots cool slightly on a cutting board.
- Using the bottom of a sturdy cup or fork, gently press down on each carrot piece until it flattens but remains intact.
- Drizzle the smashed carrots with olive oil and sprinkle garlic powder, smoked paprika, Parmesan cheese, salt, and pepper.
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Arrange the seasoned carrots in a single layer.
- Roast for about 25-30 minutes until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
