Method
 

Preparation
  1. Peel and chop your carrots into uniform pieces, then boil in salted water until fork-tender, about 10-15 minutes.
  2. Drain and let the carrots cool slightly on a cutting board.
  3. Using the bottom of a sturdy cup or fork, gently press down on each carrot piece until it flattens but remains intact.
  4. Drizzle the smashed carrots with olive oil and sprinkle garlic powder, smoked paprika, Parmesan cheese, salt, and pepper.
  5. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Arrange the seasoned carrots in a single layer.
  6. Roast for about 25-30 minutes until golden brown and crispy.
  7. Remove from the oven and let cool slightly before serving.
