Ingredients

For the Tofu
  • 1 block Firm Tofu Choose firm tofu for the best texture that holds up to frying.
For the Coating
  • 1 cup Panko Breadcrumbs These provide an ultra-crispy outer layer; gluten-free breadcrumbs can be used as a substitute.
  • 1/2 cup All-Purpose Flour Helps the breadcrumbs adhere to the tofu; any versatile flour will do just fine.
  • 1/4 cup Cornstarch Enhances crunchiness; can be swapped with arrowroot powder if preferred.
For Flavoring
  • 3 tablespoons Soy Sauce Adds deep umami flavor; for a gluten-free option, use tamari instead.
  • 1/4 cup Tonkatsu Sauce Offers a tangy and sweet taste; store-bought is easy, but homemade is delightful too!

Equipment

  • skillet
  • Bowls
  • Paper towels
  • Heavy object

Method

Step-by-Step Instructions for Tofu Katsu
  1. Begin by draining and pressing the firm tofu to remove excess moisture for about 15-20 minutes.
  2. Slice the tofu into even cutlets, about ½ inch thick.
  3. Set up a dredging station with all-purpose flour, a mixture of soy sauce and water, and panko breadcrumbs.
  4. Coat each tofu piece in flour, dip it in the soy sauce mixture, then press into the panko breadcrumbs.
  5. Heat about ¼ inch of oil in a deep skillet over medium-high heat. Fry each piece for 3-4 minutes per side.
  6. Remove from skillet and place on a paper towel-lined plate to drain excess oil. Serve with tonkatsu sauce, steamed rice, and a salad.
