Step-by-Step Instructions
  1. Grate the fresh yellow squash using a box grater. Sprinkle with salt and let it sit for about 10 minutes.
  2. Squeeze out the excess moisture from the grated squash using a clean kitchen towel.
  3. In a large bowl, mix the drained squash with eggs, flour, cornmeal, herbs, salt, and pepper until combined.
  4. Heat oil in a skillet over medium heat until shimmering, about 3 to 5 minutes.
  5. Drop spoonfuls of the batter into hot oil and fry for about 3 to 4 minutes on each side until golden brown.
  6. Transfer cooked fritters to a paper towel-lined plate to drain excess oil before serving.
