Step-by-Step Instructions for Crispy Zucchini Chips in Air Fryer
  1. Wash and dry 2 medium to large zucchinis, then slice into 1/4" to 1/2" thick rounds, and let sit to remove excess moisture.
  2. Prepare three coating stations: one for flour mixture, one for beaten eggs, and one for panko and parmesan mixture.
  3. Coat zucchini slices by dipping in flour, then eggs, and finally in panko-parmesan mixture.
  4. Preheat air fryer to 375°F (190°C) and lay coated zucchini slices in a single layer in the basket.
  5. Lightly spray zucchini chips with cooking spray, cook for 6 minutes, then flip and cook another 5 minutes.
  6. Remove from air fryer, let cool slightly, and serve warm with your favorite dips.
