For Thickening
  • 2 tablespoons Cornstarch

Step‑by‑Step Instructions
  1. Begin by prepping your ingredients. Cut the beef chuck roast into 1.5-inch cubes and season with salt and pepper. Chop potatoes and carrots, dice the onion, and mince the garlic.
  2. Layer the diced onions in the bottom of the slow cooker, followed by seasoned beef cubes, Yukon Gold potatoes, and carrots. Sprinkle minced garlic on top.
  3. In a separate bowl, combine beef broth, tomato paste, Worcestershire sauce, dried thyme, and bay leaves. Pour over the layered ingredients.
  4. Cover and set the slow cooker to LOW for 7-8 hours or to HIGH for 4-5 hours. Avoid lifting the lid during cooking.
  5. About 30 minutes before serving, stir in frozen peas. For a thicker gravy, mix cornstarch with water, stir into the stew, and let simmer for another 20-30 minutes.
  6. Taste the stew before serving and adjust seasonings as needed. Serve garnished with fresh parsley.
