  • 3 cups Bell peppers Any combination of red, yellow, or green
  • 1 large Onion Sliced
  • 1 can Diced tomatoes or salsa For extra flavor, use fire-roasted tomatoes
  • 2 tbsp Fajita seasoning Homemade blend of spices

Step-by-Step Instructions for Crockpot Chicken Fajitas
  1. Slice boneless, skinless chicken breasts into strips and set them aside.
  2. Wash and slice bell peppers into thin strips.
  3. Peel and slice a large onion.
  4. Place the sliced chicken in the bottom of your slow cooker in an even layer.
  5. Top the chicken with the sliced bell peppers and onions.
  6. Pour diced tomatoes or salsa over the layers and sprinkle with fajita seasoning.
  7. Cover and cook on low for 3-4 hours or on high for 2-3 hours.
  8. Once cooked, gently stir and serve in taco-style or with warm tortillas.
