  • 2 pounds Beef Stew Meat substitute with chuck roast or brisket, cut into 1-inch cubes
  • 1.5 pounds Baby Potatoes halved
For the Cooking Base
  • 1/2 cup Unsalted Butter or margarine/olive oil
  • 4 cloves Garlic minced
  • 2 tablespoons Olive Oil or vegetable oil
For Seasoning
  • 2 teaspoons Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme or oregano/herbes de Provence
  • 1 teaspoon Dried Rosemary or double fresh rosemary
  • 1 teaspoon Paprika consider smoked paprika
For Moisture
  • 2 cups Beef Broth or chicken/vegetable broth
For Garnish
  • 1/4 cup Fresh Parsley chopped, optional

Method
 

Step‑By‑Step Instructions
  1. In a large bowl, combine beef stew meat with olive oil, salt, black pepper, dried thyme, dried rosemary, and paprika. Toss until well-coated.
  2. Heat a skillet over medium-high heat and sear the beef cubes for 3–4 minutes on each side until browned, then transfer to the crockpot.
  3. Melt the unsalted butter in the skillet, add minced garlic and sauté for 1–2 minutes, then pour over the beef in the crockpot.
  4. Arrange the halved baby potatoes around and on top of the beef in the crockpot.
  5. Pour the beef broth over all the ingredients in the crockpot.
  6. Gently stir the ingredients to combine, ensuring not to crush the potatoes.
  7. Cover the crockpot and cook on low for 6–8 hours or on high for 3–4 hours.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Sprinkle with freshly chopped parsley before serving.
