  • 2 cups Strawberries hulled and sliced into 1/4-inch slices
  • 1/4 cup Fresh Mint cut into thin ribbons
For the Dressing
  • 3 tablespoons Olive Oil or avocado oil
  • 2 tablespoons Balsamic Vinegar or red wine/apple cider vinegar
  • 1 tablespoon Honey or agave/maple syrup for vegan option

Method
 

Preparation
  1. Wash cucumbers and strawberries under cold running water and pat dry.
  2. Slice cucumber into 1/8-inch rounds and place in a large mixing bowl.
  3. Hull strawberries and slice into 1/4-inch pieces, then add to the cucumber.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, and honey until smooth.
  5. Season the dressing with salt and black pepper, whisk to combine.
  6. Pour dressing over salad and gently toss to coat.
  7. Add fresh mint ribbons, toss gently, and let sit for 5-10 minutes before serving.
