- Boil live lobsters in a large pot of salted water for 8–10 minutes until bright red. Remove and cool before extracting the meat.
- Melt 2 tablespoons of butter in a skillet over medium heat. Add chopped shallots and sauté for 2–3 minutes until translucent.
- Add sliced mushrooms and sauté for another 4–5 minutes until tender.
- Pour in ½ cup of white wine, deglaze the pan, and let simmer for 3–4 minutes until reduced.
- Stir in 1 cup of heavy cream, mixing until the sauce thickens for about 3 minutes.
- Fold in chopped lobster meat, 1 teaspoon paprika, and half of the Parmesan cheese. Season with salt and pepper.
- Preheat broiler and spoon the mixture back into cleaned lobster shells. Top with remaining Parmesan and broil for 3–5 minutes.
- Serve hot alongside fresh salad or crusty bread.
