  • 1 cup Edward & Son's Heavy Coconut Cream Thick coconut yogurt might work.
  • 2 tablespoons Cocoa Powder (Mousse) No substitutions recommended.
  • 3 pieces Medjool Dates (for Mousse) Same as above.
Raspberry Jam Topping Ingredients
  • 1 cup Frozen Raspberries Any fruit jam can substitute.
  • 1/4 cup Water
  • 2 tablespoons Chia Seeds No substitutions recommended.
  • 1/2 teaspoon Cinnamon No substitutions recommended.

Method
 

Base Preparation
  1. In a food processor, blend together the almond flour, flax meal, runny almond butter, medjool dates, cocoa powder, dairy-free milk, and vanilla extract until well combined and crumbly.
  2. Press this mixture into the bottom of your serving cups, creating a firm base.
Chocolate Mousse Creation
  1. In the same food processor, combine the heavy coconut cream, cocoa powder, and additional medjool dates. Blend until smooth and creamy.
  2. Spoon the chocolate mousse over the prepared bases in each cup.
Raspberry Jam Making
  1. In a small saucepan over medium heat, combine the frozen raspberries, water, chia seeds, and cinnamon. Simmer until thickened.
  2. Remove from heat and let it cool slightly.
Final Assembly
  1. Top each chocolate mousse cup with the raspberry jam and spread it evenly. Refrigerate for at least 2-3 hours to set.
