Method
 

Truffle Preparation
  1. Set up a double boiler on medium heat. Combine white chocolate, unsalted butter, and heavy cream. Stir for about 5 minutes until fully melted and smooth.
  2. Remove from heat and stir in lemon extract until well blended.
  3. Let the mixture cool for 10-15 minutes, then refrigerate for 1-2 hours until firm.
  4. Scoop small amounts of the chilled mixture and roll into one-inch balls.
  5. Coat in powdered sugar or dip in melted chocolate. Place on a parchment-lined tray.
  6. Refrigerate again for about an hour to set the coatings.
