- Begin by browning the ground beef in a skillet over medium heat, breaking it apart as it cooks. Drain excess grease, and add taco seasoning, mixing well and simmering for 3-5 minutes.
- Brush each tortilla lightly with your chosen oil and preheat your air fryer to 370°F (187°C). Place a single tortilla in the basket and air fry for 2 minutes until edges turn golden brown.
- Take one crisp tortilla and spread a layer of refried beans, then add the seasoned taco meat and drizzle salsa. Place another tortilla on top and gently press down to stick.
- Spread red enchilada sauce over the top tortilla and then sprinkle with cheese, sliced olives, and diced tomatoes. Add a little more cheese on top.
- Place the assembled pizza in the air fryer and air fry at 370°F (187°C) for 2-3 minutes until the cheese is melted, bubbling, and slightly golden.
- Carefully remove the pizza from the air fryer and allow it to cool. Slice into quarters and top with shredded lettuce, chopped green onions, and sour cream if desired.
