Step-by-Step Instructions
  1. Begin by browning the ground beef in a skillet over medium heat, breaking it apart as it cooks. Drain excess grease, and add taco seasoning, mixing well and simmering for 3-5 minutes.
  2. Brush each tortilla lightly with your chosen oil and preheat your air fryer to 370°F (187°C). Place a single tortilla in the basket and air fry for 2 minutes until edges turn golden brown.
  3. Take one crisp tortilla and spread a layer of refried beans, then add the seasoned taco meat and drizzle salsa. Place another tortilla on top and gently press down to stick.
  4. Spread red enchilada sauce over the top tortilla and then sprinkle with cheese, sliced olives, and diced tomatoes. Add a little more cheese on top.
  5. Place the assembled pizza in the air fryer and air fry at 370°F (187°C) for 2-3 minutes until the cheese is melted, bubbling, and slightly golden.
  6. Carefully remove the pizza from the air fryer and allow it to cool. Slice into quarters and top with shredded lettuce, chopped green onions, and sour cream if desired.
