- In a large mixing bowl, combine all-purpose flour, eggs, softened butter, sugar, and vanilla extract. Mix until a smooth dough forms, about 5 minutes.
- Wrap the dough in plastic wrap and let it rest at room temperature for about 15 minutes.
- After resting, roll the dough out to about 1/8 inch thick on a lightly floured surface. Cut out circles using a cookie cutter.
- Heat vegetable oil to 350°F (175°C). Fry the dough pieces for 2-3 minutes until golden brown. Drain on paper towels.
- In a medium bowl, combine ricotta cheese, powdered sugar, and optional cinnamon until smooth.
- Fill the cooled pastry shells with the ricotta mixture using a piping bag or spoon.
- Dust with powdered sugar before serving for an elegant touch.
