Ingredients
  

For the Pastry Shells
  • 2 cups All-purpose Flour sifted for lighter texture
  • 2 large Eggs room temperature
  • 3 Tbsp Butter softened; can substitute with coconut oil
  • 1 Tbsp Sugar adjust based on sweetness preference
  • 1 tsp Vanilla Extract or vanilla bean paste for enhanced flavor
For the Ricotta Filling
  • 1 cup Ricotta Cheese well-drained
  • 1/2 cup Powdered Sugar adjust sweetness as desired
  • 1/2 tsp Cinnamon optional
For Frying
  • 3 cups Vegetable Oil or canola/coconut oil

Method
 

Preparation
  1. In a large mixing bowl, combine all-purpose flour, eggs, softened butter, sugar, and vanilla extract. Mix until a smooth dough forms, about 5 minutes.
  2. Wrap the dough in plastic wrap and let it rest at room temperature for about 15 minutes.
  3. After resting, roll the dough out to about 1/8 inch thick on a lightly floured surface. Cut out circles using a cookie cutter.
  4. Heat vegetable oil to 350°F (175°C). Fry the dough pieces for 2-3 minutes until golden brown. Drain on paper towels.
  5. In a medium bowl, combine ricotta cheese, powdered sugar, and optional cinnamon until smooth.
  6. Fill the cooled pastry shells with the ricotta mixture using a piping bag or spoon.
  7. Dust with powdered sugar before serving for an elegant touch.
