Ingredients
  

For the Chicken
  • 1 lb Boneless Chicken Breast/Thighs cut into thin slices
  • 2 tbsp Shaoxing Wine (or Dry Sherry) substitute with chicken broth if needed
  • 1 tbsp Cornstarch for marinating chicken
  • 1 tsp Salt to enhance flavor
For the Sauce
  • 1 cup Chicken Broth base for the sauce
  • 2 tbsp Oyster Sauce or vegetarian version
  • 2 tbsp Soy Sauce regular or low-sodium
  • 1 tbsp Sugar adjust to taste
  • 1/2 tsp White/Black Pepper to taste
  • 1 tbsp Sesame Oil for enhanced flavor
For Stir-Frying
  • 2 tbsp Peanut Oil (or Vegetable Oil) for high-heat cooking
  • 3 cloves Garlic minced
  • 1 tbsp Ginger grated
For the Noodles and Veggies
  • 8 oz Fresh/Dried Chow Mein Noodles fresh recommended
  • 2 cups Shredded Cabbage or pre-cut coleslaw mix
  • 1 cup Carrots julienned
  • 1 qty Anaheim Pepper optional
  • 2 qty Green Onions chopped

Method
 

Step-by-Step Instructions
  1. Marinate the chicken by combining sliced chicken with Shaoxing wine, cornstarch, and salt. Let it rest for about 10 minutes.
  2. Prepare the sauce by whisking together chicken broth, Shaoxing wine, oyster sauce, soy sauce, sugar, white pepper, and sesame oil.
  3. Cook the chow mein noodles in boiling water according to package instructions, about 3-5 minutes, then drain and rinse.
  4. Stir-fry the marinated chicken in a hot skillet with peanut oil for about 5 minutes until cooked through.
  5. Add garlic and ginger to the same skillet and stir-fry for about 30 seconds until fragrant.
  6. Incorporate shredded cabbage and carrots into the skillet and stir-fry for 2-3 minutes until slightly softened.
  7. Combine the cooked noodles and chicken back into the skillet. Pour the sauce over and stir-fry for 2-3 minutes to combine.
  8. Add sliced Anaheim pepper and chopped green onions. Stir briefly and cook for an additional minute before serving.
