- Marinate the chicken by combining sliced chicken with Shaoxing wine, cornstarch, and salt. Let it rest for about 10 minutes.
- Prepare the sauce by whisking together chicken broth, Shaoxing wine, oyster sauce, soy sauce, sugar, white pepper, and sesame oil.
- Cook the chow mein noodles in boiling water according to package instructions, about 3-5 minutes, then drain and rinse.
- Stir-fry the marinated chicken in a hot skillet with peanut oil for about 5 minutes until cooked through.
- Add garlic and ginger to the same skillet and stir-fry for about 30 seconds until fragrant.
- Incorporate shredded cabbage and carrots into the skillet and stir-fry for 2-3 minutes until slightly softened.
