  • 1 pound salmon fillets Fresh or thawed
  • 1 cup panko breadcrumbs For extra crunch
  • 1 large egg Beaten
For the Bang Bang Sauce
  • ½ cup mayonnaise Substitute with Greek yogurt if desired
  • ¼ cup sweet chili sauce Adjust for sweetness
  • 1 tablespoon sriracha Adjust for spice level
For Garnish
  • 2 tablespoons green onions Chopped, can substitute with chives

Method
 

Preparation Steps
  1. Cut salmon fillets into bite-sized pieces, roughly one-inch cubes.
  2. In a mixing bowl, whisk together mayonnaise, sweet chili sauce, and sriracha.
  3. In a shallow bowl, beat the egg and place panko breadcrumbs in another bowl.
  4. Dip each salmon piece in egg and then coat with panko breadcrumbs.
  5. Heat vegetable oil in a skillet and fry the salmon bites until golden brown.
  6. Drain on paper towels and drizzle with bang bang sauce, garnished with green onions.
