Method
 

Preparation Steps
  1. Begin by grating the zucchini and carrot. Squeeze out excess moisture from zucchini.
  2. In a mixing bowl, combine cooked quinoa, grated zucchini, grated carrot, and mashed chickpeas. Stir in bell pepper and green onions.
  3. Add breadcrumbs and egg (or flax egg) along with soy sauce, garlic powder, onion powder, ground cumin, smoked paprika, salt, and pepper. Mix well.
  4. Shape the mixture into 2-3 inch patties, aiming for about 10-12 patties.
  5. Heat olive oil in a skillet and cook patties for 4-5 minutes per side until golden brown. Alternatively, bake in an oven at 375°F for 25-30 minutes.
  6. Serve warm with your favorite dips or salad.
