  • 1 medium Onion or shallots/green onions as substitutes
  • 1 medium Red Bell Pepper or yellow/orange bell peppers
  • 1 medium Green Bell Pepper any color can replace it
  • 2 medium Tomatoes or canned diced tomatoes
  • 3 cloves Garlic or use garlic powder (1/4 tsp per clove)
  • 1 cup Cilantro or parsley for a different herb profile
Beans Ingredients
  • 2 cans Canned Black Beans do not drain
  • 1 tsp Ground Cumin ground coriander can substitute
  • 1 tsp Dried Oregano Italian seasoning can be used
  • 2 tbsp White Vinegar or apple cider vinegar
  • 2 tbsp Olive Oil avocado oil is an alternative

Method
 

Preparation
  1. In a food processor, combine the onion, red and green bell peppers, tomatoes, garlic, and cilantro. Pulse until the mixture reaches a salsa-like consistency.
  2. Heat olive oil in a large skillet over medium heat. Add the sofrito mixture and sauté for 3-5 minutes until fragrant and softened.
  3. Stir in the canned black beans with their liquid, ground cumin, dried oregano, and white vinegar. Mix well.
  4. Reduce heat to low and let simmer uncovered for 20-25 minutes, stirring occasionally.
  5. Adjust seasoning with salt and pepper as needed.
  6. Serve hot, garnished with freshly chopped cilantro.
