- Preheat your oven to 450°F (232°C) and line a large baking sheet with parchment paper.
- Slice the green cabbage into six ¾-inch thick rounds and brush both sides with olive oil, seasoning generously with salt and pepper.
- Place the cabbage rounds on the baking sheet and roast in the oven for 15-20 minutes until crispy and golden.
- While the cabbage is roasting, shred the Dubliner cheese and slice the corned beef into manageable pieces.
- Once roasted, spread a teaspoon of whole grain mustard on each cabbage round, layer with corned beef, then sprinkle with shredded Dubliner cheese.
- Return the assembled pizzas to the oven for 5 minutes to melt the cheese.
- Remove from the oven, garnish with chopped scallions, serve warm and enjoy!
