  • 8 oz Sweet Potato Noodles (Dangmyeon) Gluten-free noodles with a chewy texture
For the Protein
  • 8 oz Beef Can be substituted with chicken or tofu
For the Vegetables
  • 1 cup Carrots Julienne for quicker cooking
  • 2 cups Spinach Fresh for the best texture
  • 1 cup Bell Peppers Any color works
For the Sauce
  • 3 tbsp Soy Sauce Low-sodium varieties recommended
  • 1 tbsp Sesame Oil Optional for lighter dishes
For Garnish
  • 2 tbsp Green Onions Chopped, can replace with chives

Method
 

Step-by-Step Instructions
  1. Soak the sweet potato noodles (Dangmyeon) in hot water for about 30 minutes until tender.
  2. Heat a tablespoon of oil in a large skillet, add sliced beef, and stir for 4-5 minutes until browned. Remove and set aside.
  3. In the same skillet, add carrots and bell peppers, sautéing for 5-7 minutes. Add spinach, cooking until wilted.
  4. Return the cooked protein to the skillet, add soaked noodles, soy sauce, and sesame oil. Toss everything for 2-3 minutes over medium heat.
  5. Remove from heat, toss with green onions, and serve warm.
