- Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl until well combined. Press into the bottom of a baking dish.
- In another bowl, mix softened cream cheese and powdered sugar until smooth. Fold in the whipped cream and chopped rhubarb.
