- Preheat your oven to 350°F (175°C). Grease a 9x3-inch springform pan and line the base with parchment paper.
- In a medium bowl, sift together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1 teaspoon of baking soda.
- In a large bowl, cream together 4 ounces of softened butter and 1 cup of sugar with an electric mixer on medium speed for 2-3 minutes until light and fluffy.
- Add in 2 large eggs, one at a time, mixing well after each addition. Then, fold in ½ teaspoon of vanilla extract and ½ cup of Greek yogurt.
- Gradually add the dry flour mixture to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared springform pan. Arrange the sliced peaches and blueberries on top.
- Sprinkle 1 teaspoon of granulated sugar over the fruit topping. Bake for about 1 hour, checking for doneness.
- Allow the cake to cool in the pan for about 40 minutes before transferring it to a wire rack to cool completely.
