Preparation Steps
  1. In a mixing bowl, whisk together pumpkin puree, yogurt (or eggs), almond milk, vanilla extract, pumpkin pie spices, and maple syrup until smooth and creamy.
  2. Place a non-stick skillet over medium heat and add butter or oil. Allow it to melt and become bubbly.
  3. Dip slices of bread into the custard mixture, soaking for about 10-15 seconds per side. Place the soaked bread in the skillet and cook for 2-3 minutes on each side until golden brown.
  4. Transfer the slices to a plate, keep them warm, and repeat the process with remaining bread slices. Serve warm, topped with cinnamon, powdered sugar, or maple syrup.
