- In a medium bowl, whisk together peach preserves, soy sauce, whiskey, olive oil, brown sugar, balsamic vinegar, minced garlic, Dijon mustard, dried thyme, and red pepper flakes until well combined.
- Place chicken breasts or thighs in the marinade, ensuring they are fully covered. Let marinate in the refrigerator for at least 1 hour, ideally 2-4 hours.
- Remove the chicken from the fridge and let it sit at room temperature for about 15 minutes. Season generously with salt and pepper.
- Preheat your grill to medium-high heat, aiming for around 375°F–400°F. Brush the grates with oil to prevent sticking.
- Grill the marinated chicken for about 6-7 minutes on one side until grill marks appear. Flip and cook for another 6-7 minutes, ensuring it reaches an internal temperature of 165°F.
- If desired, add halved peaches to the grill for about 3-4 minutes until they achieve a nice char.
