Step-by-Step Instructions
  1. In a medium bowl, whisk together peach preserves, soy sauce, whiskey, olive oil, brown sugar, balsamic vinegar, minced garlic, Dijon mustard, dried thyme, and red pepper flakes until well combined.
  2. Place chicken breasts or thighs in the marinade, ensuring they are fully covered. Let marinate in the refrigerator for at least 1 hour, ideally 2-4 hours.
  3. Remove the chicken from the fridge and let it sit at room temperature for about 15 minutes. Season generously with salt and pepper.
  4. Preheat your grill to medium-high heat, aiming for around 375°F–400°F. Brush the grates with oil to prevent sticking.
  5. Grill the marinated chicken for about 6-7 minutes on one side until grill marks appear. Flip and cook for another 6-7 minutes, ensuring it reaches an internal temperature of 165°F.
  6. If desired, add halved peaches to the grill for about 3-4 minutes until they achieve a nice char.
  7. Once cooked, let the chicken rest for 2-3 minutes before serving. Enjoy with grilled peaches and your favorite summer sides.

Notes

For best flavor, marinate chicken for longer if possible. Use fresh peaches for flavor; canned peaches are a good alternative when fresh peaces aren't available.
