Preparation
- Spray your slow cooker with non-stick cooking spray.
- In a large bowl, combine minced garlic, lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Whisk until blended.
- Place chicken in the slow cooker, pour marinade over, cover, and cook on HIGH for 3-4 hours or LOW for 6-8 hours.
- Prepare tzatziki by combining Greek yogurt, minced garlic, grated cucumber, parsley, and salt. Mix and refrigerate for at least 1 hour.
- Once cooked, shred chicken in the slow cooker using two forks and mix well.
- Serve shredded chicken in warm pocketless pita, topped with tzatziki, tomatoes, onions, cucumbers, and lettuce.
