Ingredients
  

For the Chicken Marinade
  • 2 pounds boneless skinless chicken breasts Use thighs for tenderness.
  • 3 cloves garlic Minced
  • 1/4 cup fresh lemon juice Freshly squeezed is best.
  • 1 medium onion Finely diced (red or yellow).
  • 1/2 cup water Can use chicken broth.
  • 2 tablespoons olive oil Or avocado oil.
  • 2 tablespoons red wine vinegar Apple cider vinegar is a substitute.
  • 1 tablespoon oregano Dried oregano works well.
  • 1 teaspoon allspice Can be omitted or swapped with cinnamon.
  • 1 teaspoon lemon pepper Mix with black pepper and lemon zest if needed.
For the Tzatziki Sauce
  • 1 cup Greek yogurt Use non-fat or dairy-free if preferred.
  • 1 medium cucumber Grated, moisture squeezed out.
  • 1 tablespoon fresh parsley Chopped; fresh dill is an alternative.
  • 1/2 teaspoon salt Adjust to taste.

Method
 

Preparation
  1. Spray your slow cooker with non-stick cooking spray.
  2. In a large bowl, combine minced garlic, lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Whisk until blended.
  3. Place chicken in the slow cooker, pour marinade over, cover, and cook on HIGH for 3-4 hours or LOW for 6-8 hours.
  4. Prepare tzatziki by combining Greek yogurt, minced garlic, grated cucumber, parsley, and salt. Mix and refrigerate for at least 1 hour.
  5. Once cooked, shred chicken in the slow cooker using two forks and mix well.
  6. Serve shredded chicken in warm pocketless pita, topped with tzatziki, tomatoes, onions, cucumbers, and lettuce.
