  • 2 cups diced sweet potatoes no substitutions recommended
  • 1 tablespoon chili powder adjust according to heat preference
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika or regular paprika for a milder taste
  • 1 teaspoon garlic powder or fresh garlic for stronger flavor
  • to taste salt and pepper
  • 1 can diced green chiles choose mild or hot
  • 1 cup salsa avoid thick salsas
  • 1.5 cups cooked brown rice can be substituted with white rice, quinoa, or cauliflower rice
  • 1 can black beans (low sodium) or pinto beans for variety
  • 1/4 cup chopped cilantro omit if not available
  • 1 tablespoon lime juice or lemon juice
  • 1 cup shredded cheese using from a block is recommended

Method
 

Step-by-Step Instructions
  1. Heat the oil in a large skillet over medium heat for 1-2 minutes until shimmering.
  2. Add diced sweet potatoes, season with salt and pepper, and sauté for about 8 minutes until slightly tender and browned.
  3. Pour in 3-4 tablespoons of water, cover and steam for an additional 4 minutes until fork-tender.
  4. Remove the lid, stir in diced green chiles, black beans, cooked brown rice, and spices. Cook for another 2 minutes.
  5. Incorporate salsa and lime juice, and fold in chopped cilantro if using.
  6. Top with shredded cheese, cover, and cook for 3-4 minutes over low heat until melted.
  7. Serve hot and garnish with extra cilantro, avocado slices, and Greek yogurt or sour cream if desired.
