Preparation Steps
  1. In a small bowl or jar, combine 4 tablespoons of olive oil, the juice from half a lemon, 1 tablespoon of honey, 1 tablespoon of white wine vinegar, and a sprinkle of garlic powder, salt, and pepper to taste. Whisk or shake vigorously for about 30 seconds until well blended and slightly thickened. Set the dressing aside.
  2. In a large mixing bowl, slice approximately 2 cups of ripe strawberries and 1 to 2 cucumbers. Aim for even-sized pieces—quarter the strawberries and slice the cucumbers into thin rounds. Add these bright colors into the bowl along with ½ cup of crumbled feta cheese.
  3. Chop about 5-10 fresh leaves each of basil and mint. Gently fold these fragrant herbs into the salad, allowing their refreshing essence to blend with the fruits and cheese.
  4. Carefully pour the prepared dressing over the salad ingredients. Using two large spoons, gently toss everything together for about 1 minute. Pay attention to the feta as it can break apart, so handle tenderly.
  5. Taste the completed salad and adjust seasoning if necessary with more salt and pepper. Serve immediately in a large serving bowl.
