For the Sauce
  • 1/3 cup peanut butter smooth for best results
  • 2 tablespoons low-sodium soy sauce or tamari for gluten-free
  • 1 tablespoon brown sugar or honey maple syrup for vegan
  • 2 tablespoons rice wine vinegar or apple cider vinegar
  • 1 clove minced garlic fresh is best
  • 1 teaspoon minced ginger fresh preferred
  • 1 tablespoon sriracha sauce adjust to taste
For the Filling
  • 2 cups cooked, shredded chicken can use rotisserie chicken
  • 2 cups coleslaw mix or shredded cabbage and carrots
  • 1/4 cup grated carrot optional
  • 1/4 cup chopped cilantro or green onions
  • 1/4 cup roasted, salted peanuts optional for nut-free
For Wrapping
  • 4 tortillas tortillas gluten-free available

Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together peanut butter, soy sauce, brown sugar, rice wine vinegar, minced garlic, minced ginger, and sriracha. Adjust consistency with water if needed. Set aside.
  2. In a large mixing bowl, combine shredded chicken, coleslaw mix, grated carrot, chopped cilantro, and peanuts. Toss gently.
  3. Drizzle the peanut sauce over the filling and toss gently to coat. Let sit for about 5 minutes.
  4. Warm tortillas in the microwave for about 30 seconds. Alternatively, heat on a skillet for 15-20 seconds on each side.
  5. Place filling mixture on each tortilla, fold in the sides, and roll tightly to secure the filling.
  6. Slice wraps in half diagonally and serve immediately, with extra peanut sauce on the side.
