Ingredients
  

For the Pasta
  • 8 ounces Pasta Any shape you prefer
For the Sauce
  • 2 tablespoons Olive Oil Avocado oil can be a delightful alternative
  • 2 medium Zucchini Cut into half-moons without peeling
  • 1 pint Cherry Tomatoes Substitute with any small tomato variety
  • 2 cloves Garlic Minced or crushed works best
For Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Italian Seasoning
  • 1/4 teaspoon Chili Flakes Adjust to your spice preference
  • 1 teaspoon Salt Don't skip it in the pasta water
  • 1/2 teaspoon Black Pepper Adjust to taste
For the Finish
  • 1/2 cup Parmesan Cheese Grated, opt for vegetarian for meatless option
  • 1 cup Fresh Basil Chopped, or omit if not available

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil, then add the pasta. Cook according to package instructions until al dente, about 8-10 minutes.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced zucchini and sauté for about 5-7 minutes until golden and tender.
  3. In the same skillet, add cherry tomatoes, minced garlic, garlic powder, Italian seasoning, chili flakes, salt, and black pepper. Sauté until tomatoes soften, about 3-4 minutes.
  4. Pour in the reserved pasta water and simmer for 2-3 minutes until slightly thickened.
  5. Add the cooked pasta and grated Parmesan cheese, toss gently for about 2 minutes on low heat.
  6. Fold in the sautéed zucchini and fresh basil, combine for about a minute.
  7. Serve immediately, garnished with additional Parmesan and fresh basil.
