  • 4 cups Water Base of the stew
  • 1/4 cup Kimchi Juice From the jar of kimchi
  • 2 teaspoons Gochugaru Korean red pepper flakes
  • 1 teaspoon Gochujang Korean chili paste
  • 1/2 tablespoon Soy Sauce Add tamari for gluten-free
  • 12-14 ounces Firm Tofu Main protein source
  • 3 pieces Green Onions, finely chopped For garnish
  • Salt To taste

Method
 

Cooking Steps
  1. Heat the oil in a medium pot over medium-high heat until shimmering.
  2. Sauté the kimchi, onion, and garlic for 5-7 minutes until onions are translucent.
  3. Add water and kimchi juice, then stir in gochugaru and gochujang. Bring to a gentle boil.
  4. Fold in the tofu and bring back to a boil, then reduce heat and simmer for 15 minutes.
  5. Remove from heat, add green onions, and season with salt to taste before serving.
