  • 2 tbsp Extra Virgin Olive Oil or avocado oil

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish.
  2. Spread the hash browns in an even layer in the baking dish, drizzle olive oil and sprinkle with salt. Bake for about 30 minutes until golden brown.
  3. Whisk together eggs and milk, then mix in bell pepper, onion, garlic, and green onions. Season to taste.
  4. Layer half of the cheeses on the baked hash browns, pour the egg mixture evenly, then top with remaining cheese.
  5. Bake at 350°F (175°C) for 30-35 minutes until bubbly and set. Cover with foil if browning too quickly.
  6. Let cool for a few minutes, then garnish with green onions, paprika, and pepper before serving.
