- Cook the jumbo pasta shells in salted boiling water for 9-11 minutes until al dente. Drain and cool.
- In a skillet, sauté diced bell peppers and green onions in olive oil until soft, about 5 minutes. Stir in the shredded chicken, Cajun seasoning, garlic powder, ricotta, and mozzarella until creamy.
- In the same skillet, melt butter, whisk in flour to create a roux. Gradually add heavy cream and chicken broth, stirring until thickened.
- Preheat oven to 375°F (190°C). Spread a layer of sauce in a baking dish, stuff the shells with the filling, and place seam side up.
- Top the shells with the remaining sauce and sprinkle mozzarella. Cover with foil and bake for 20 minutes, then remove the foil and bake an additional 10 minutes.
- Let rest for a few minutes, garnish with parsley, and serve with garlic bread.
