  • 12 pieces jumbo pasta shells cooked al dente
  • 2 cups cooked chicken shredded rotisserie
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese plus extra for topping
  • 1/2 cup parmesan cheese
  • 1 large egg acts as a binder
  • 1/2 cup green onions diced
  • 1 tablespoon cajun seasoning adjust to taste
  • 1 teaspoon garlic powder
For the Sauce
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth or vegetable broth
  • 1 teaspoon smoked paprika optional
  • 1/4 teaspoon cayenne pepper optional
  • to taste salt and black pepper
For the Garnish
  • 1 tablespoon fresh parsley chopped

Method
 

Step-by-Step Instructions
  1. Cook the jumbo pasta shells in salted boiling water for 9-11 minutes until al dente. Drain and cool.
  2. In a skillet, sauté diced bell peppers and green onions in olive oil until soft, about 5 minutes. Stir in the shredded chicken, Cajun seasoning, garlic powder, ricotta, and mozzarella until creamy.
  3. In the same skillet, melt butter, whisk in flour to create a roux. Gradually add heavy cream and chicken broth, stirring until thickened.
  4. Preheat oven to 375°F (190°C). Spread a layer of sauce in a baking dish, stuff the shells with the filling, and place seam side up.
  5. Top the shells with the remaining sauce and sprinkle mozzarella. Cover with foil and bake for 20 minutes, then remove the foil and bake an additional 10 minutes.
  6. Let rest for a few minutes, garnish with parsley, and serve with garlic bread.
