- Roast 3 cloves of garlic in a skillet over medium heat for about 5 minutes until fragrant.
- Chop 2-3 chipotle peppers in adobo sauce for blending.
- In a blender, combine 1 cup of sour cream, 1/2 cup of mayonnaise, chipotle peppers, and 2 tablespoons of adobo sauce.
- Add roasted garlic, lime juice, smoked paprika, cumin, and salt. Blend for 30 to 60 seconds until smooth.
- Taste and adjust flavors as needed. Add more chipotle for heat or sour cream to cool down.
- Check consistency and add olive oil or water if too thick, then blend again.
- Transfer to an airtight container and chill in the refrigerator for at least 30 minutes.
