Step-by-Step Instructions
  1. Roast 3 cloves of garlic in a skillet over medium heat for about 5 minutes until fragrant.
  2. Chop 2-3 chipotle peppers in adobo sauce for blending.
  3. In a blender, combine 1 cup of sour cream, 1/2 cup of mayonnaise, chipotle peppers, and 2 tablespoons of adobo sauce.
  4. Add roasted garlic, lime juice, smoked paprika, cumin, and salt. Blend for 30 to 60 seconds until smooth.
  5. Taste and adjust flavors as needed. Add more chipotle for heat or sour cream to cool down.
  6. Check consistency and add olive oil or water if too thick, then blend again.
  7. Transfer to an airtight container and chill in the refrigerator for at least 30 minutes.
