Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the double cream and icing sugar. Whisk them on medium speed until soft peaks form, about 3-5 minutes.
  2. In a separate bowl, gently combine the mascarpone cheese with the pistachio cream until smooth. Fold the whipped cream into this mixture in thirds.
  3. Pour strong, cooled coffee into a shallow dish. Lightly dip each savoiardi sponge finger into the coffee and arrange them in a single layer in your serving dish.
  4. Spoon half of your pistachio cream mixture over the layer of soaked ladyfingers. Repeat with another layer of sponge fingers followed by the remaining cream.
  5. Using a piping bag, create decorative patterns with extra pistachio cream on the top layer if desired. Cover and chill in the refrigerator for at least 6 hours.
  6. About 20 minutes before serving, remove from fridge. Sprinkle with chopped roasted pistachios just before serving.
