Baking Instructions
  1. Preheat your oven to 375°F (190°C) and spray a 6-cavity donut pan with nonstick cooking spray.
  2. Combine aquafaba and vinegar in a small bowl and let it curdle for 5 minutes.
  3. In a large bowl, whisk together melted vegan butter and granulated sugar, then mix in the aquafaba mixture, lemon zest, and lemon extract.
  4. In another bowl, whisk together gluten-free flour, baking powder, and salt, then gradually incorporate into the wet ingredients.
  5. Fold in diced blackberries gently.
  6. Using a piping bag, fill each donut cavity 2/3 full with batter.
  7. Bake for 8-10 minutes until donuts spring back when pressed, then cool for a few minutes.
  8. Whisk together glaze ingredients until smooth, adjusting lemon juice for consistency.
  9. Dip cooled donuts in glaze or drizzle over them.
