- In a large bowl, whisk together melted vegan butter and granulated sugar, then mix in the aquafaba mixture, lemon zest, and lemon extract.
- In another bowl, whisk together gluten-free flour, baking powder, and salt, then gradually incorporate into the wet ingredients.
- Fold in diced blackberries gently.
- Using a piping bag, fill each donut cavity 2/3 full with batter.
- Bake for 8-10 minutes until donuts spring back when pressed, then cool for a few minutes.
- Whisk together glaze ingredients until smooth, adjusting lemon juice for consistency.
- Dip cooled donuts in glaze or drizzle over them.
