Ingredients
  

For the Loaf
  • 1 cup Whole wheat pastry flour or substitute with all-purpose flour
  • 1 cup Unbleached all-purpose flour for lightness
  • 2 teaspoons Baking powder ensure it's fresh
  • 1 teaspoon Baking soda check expiry date
  • 1/2 teaspoon Salt adjust as desired
  • 2 teaspoons Ground cinnamon
  • 1 teaspoon Ground ginger adjust for taste
  • 1/2 teaspoon Ground nutmeg freshly grated for aroma
  • 1/4 teaspoon Ground cloves use sparingly
  • 1 cup Light brown sugar or regular brown sugar
  • 1/2 cup Olive oil or any vegetable oil
  • 1 teaspoon Vanilla extract use pure for best flavor
  • 2 large Eggs or egg replacer for vegan option
  • 1 cup Pumpkin purée canned or homemade
  • 1/2 cup Almond milk or any milk of choice
For the Icing
  • 1/4 cup Plant-based butter or regular butter
  • 1 cup Powdered sugar sift for smooth icing

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare an 8x4 inch loaf pan.
  2. In a medium bowl, mix all dry ingredients: flours, baking powder, baking soda, salt, and spices.
  3. In a large bowl, combine light brown sugar, olive oil, vanilla extract, eggs, pumpkin purée, and almond milk.
  4. Gently fold the dry mixture into the wet ingredients until just combined.
  5. Pour the batter into the loaf pan and create a shallow line down the center.
  6. Bake for 50-60 minutes, then cool in the pan for about 10 minutes.
  7. Remove from the pan and let cool completely on a wire rack.
Icing
  1. In a saucepan, heat brown sugar, plant-based butter, and almond milk until boiling, whisking continuously.
  2. Remove from heat and mix in sifted powdered sugar until smooth.
  3. Drizzle icing over the cooled loaf and let set before serving.
