Step‑by‑Step Instructions
- In a stand mixer, combine the all-purpose flour, sugar, instant yeast, and salt. Warm your milk until just lukewarm, then pour it in along with the melted butter. Using a dough hook, mix on medium speed for 4-5 minutes until smooth and slightly tacky.
- Shape the dough into a ball and place it in a greased bowl. Cover and let it rise in a warm place for about 30-60 minutes until doubled in size.
- Preheat your oven to 450°F (232°C) and line baking sheets with parchment paper. Punch down the risen dough, divide into 12 pieces, roll into ropes, then cut into 1-2 inch pieces.
- Boil 8 cups of water and mix in ½ cup of baking soda. Lower the pretzel bites by slotted spoon into the boiling water for about 30 seconds each.
- Lift out and place on prepared baking sheets. Mix egg and water to create an egg wash, brush on tops, sprinkle with coarse salt, and bake for 12-14 minutes until golden brown.
