Method
 

Step‑by‑Step Instructions
  1. In a stand mixer, combine the all-purpose flour, sugar, instant yeast, and salt. Warm your milk until just lukewarm, then pour it in along with the melted butter. Using a dough hook, mix on medium speed for 4-5 minutes until smooth and slightly tacky.
  2. Shape the dough into a ball and place it in a greased bowl. Cover and let it rise in a warm place for about 30-60 minutes until doubled in size.
  3. Preheat your oven to 450°F (232°C) and line baking sheets with parchment paper. Punch down the risen dough, divide into 12 pieces, roll into ropes, then cut into 1-2 inch pieces.
  4. Boil 8 cups of water and mix in ½ cup of baking soda. Lower the pretzel bites by slotted spoon into the boiling water for about 30 seconds each.
  5. Lift out and place on prepared baking sheets. Mix egg and water to create an egg wash, brush on tops, sprinkle with coarse salt, and bake for 12-14 minutes until golden brown.
