For the Dressing
  • cup Olive oil Can substitute with avocado or neutral oils
  • 1 tbsp Fresh lemon juice Juice of one lemon
  • 1 tsp Dried oregano Or Italian seasoning
  • 1 tbsp Dijon mustard Can substitute with yellow mustard
  • 1 clove Minced garlic Or garlic powder
  • to taste Salt and pepper

Method
 

Step-by-Step Instructions
  1. Cook the pasta in a large pot of salted boiling water for about 8-10 minutes, then drain and cool.
  2. Prepare the dressing by whisking together olive oil, lemon juice, oregano, mustard, and garlic. Season with salt and pepper.
  3. Chop the salami, grape tomatoes, cucumber, bell peppers, and red onion.
  4. Combine the cooled pasta with the chopped vegetables, mozzarella, and olives.
  5. Pour the dressing over and add grated Parmesan and parsley; mix gently.
  6. Serve immediately or chill in the refrigerator for at least 30 minutes before serving.
