- Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish.

- In a medium mixing bowl, whisk together the cottage cheese, eggs, honey or maple syrup, vanilla extract, lemon zest, and lemon juice.

- Gently fold in the almond flour and baking powder until no dry spots remain.

- Lightly fold in the raspberries, being careful with fresh berries or adding frozen straight from the freezer.

- Pour the batter into the greased baking dish and spread evenly. Bake for 30–35 minutes.

- Allow to cool for 10–15 minutes, then cut into 9 equal squares and serve.
